Traditional Christmas Cake

Steve from Steve’s Silver & Stone’s shares his Traditional Christmas Cake recipe.

I make this every year on Melbourne Cup day as it allows the flavour to mature.”

INGREDIENTS

– 3 cups plain flour

– 2 teaspoons baking powder

– 1 teaspoon cinnamon

– Cup each of currants, sultanas, and chopped walnuts

– 2/3 cup sunflower oil

– 1 cup sugar

– 1 cup orange juice

– 1 tablespoon grated orange rind

– Icing sugar for dusting


METHOD

1. Sift together flour, baking powder and cinnamon.

2. Add the fruits.

3. Beat together the oils, sugar, orange juice and orange rind.

4. Add the dry ingredients and stir until combined thoroughly.

5. Pour the mixture into a 13/9 inch baking pan and bake for 45 minutes in a moderate oven.

6. When cool , sprinkle with sifted icing sugar.
