Pasta alla Gricia by Amir Manoly

Amir shares his Pasta alla Gricia recipe for everyone to try at home!

Pasta alla Gricia – Serves 4 

Ingredients

250g guanciale

80g pecorino 

1 pack good quality pasta (rigatoni or spaghetti) 

Black pepper 

Directions

1. Bring a large pot of water to the boil.

2. Cut guanciale into thin strips then set aside .

3. Grate pecorino then set aside.

4. Salt pasta water then add pasta, cooking for 1 minute less then packet advises. 

5. Meanwhile fry guanciale in a large fry pan on low heat till browned and crispy.

6. Remove guanciale but leave excess fat in pan.

7. Crack pepper in pan and allow to bloom for 30 seconds. 

8. Remove 1 cup of water from pot, set aside then strain pasta.

9. Add half cup of pasta water to the pan and increase heat to medium/ high and allow to combine with fat and pepper .

10. Add cooked pasta and combine with water (should be starchy and thickening).

11. Remove from heat and add grated pecorino, constantly stirring to combine.

12. Add more pasta water until desired creaminess is achieved.

13. Top with more cracked pepper and grated pecorino.
