Perfectly cooked chicken breast with pan sauce
Ingredients
2 chicken breasts – room temp
2 tbsp olive oil
Salt and pepper to season
Pan Sauce
¼ shallot finely diced
1 garlic clove, minced
½ tbsp thyme, finely diced
1 cup chicken stock
1 tbsp butter
Salt and pepper to taste
Directions
1. Preheat oven to 190 ℃ Fan Forced.
2. Heat an oven proof fry pan over high heat.
3. Add olive oil to pan and once lightly smoking add breasts, dropping heat to medium.
4. Cook for 3.5 – 4 minutes on one side flip and then place in the oven for 10-12 minutes.
5. Once cooked take out of oven and allow to rest.
6. While resting add shallots and garlic to the pan and cook on low to medium heat for 1-2 minutes.
7. Add chicken stock and increase heat to high, cooking for 3 minutes.
8. Once reduced add butter, thyme and season to taste.
9. Serve pan sauce over chicken and enjoy.
