Amir’s Spanakopita

Get ready to tantalise your taste buds! Former Master Chef contestant Amir has shared his Spanakopita recipe!

INGREDIENTS

– 1/2 pack phyllo pastry

-1/2 bunch silverbeet (discard stalks) 

– Olive oil

– 1/2 brown onion

– 1/2 bunch spring onion

– 1 garlic clove

– 1 tablespoon dill

– 150g feta

– 75g ricotta

– 2 eggs

– Pinch nutmeg

– 60g butter melted

– Salt and pepper

DIRECTIONS

1. Heat oil in frypan, then add onion, spring onion and garlic cooking until softened 

2. Add silverbeet and dill and cooking over low heat until silverbeet has wilted .

3. Drain in colander and allow to cool to room temperature.

4. Add feta, ricotta, eggs, nutmeg and season to taste.

5. Preheat the oven to 180°C.

6. Place three sheets of phyllo on baking paper and cut into three strips lengthwise. 

7. Add 1-2 tbsp of filling on the side closest to you and cover phyllo with butter.

8. Roll into edge over itself and keep folding in a triangle shape till closed cigar.

9. Repeat with remaining filling.

10. Cover with remaining butter and cook for 30-40 minutes or until golden brown.
