Sue from Den’s Quality Meats has shared her scrumptious Christmas Plum Pudding recipe for everyone to try!
Ingredients:
- ½ Bag Oranges & Lemons (mixed and grated)
- 2 packets of mixed fruit (375g)
- 1 orange (squeezed)
- 1 lemon (squeezed)
- 5 cups of bread crumbs
- 1 teaspoon of mixed spices
- 2 cups of brown sugar
- 5 eggs
- 250g of butter
- 1 ¼ cup of Plain Flower sifted
- Cloth to wrap your pudding (Calico or Muslin)
Method:
First Step (Night Before making the pudding)
- ½ Bag Orange & Lemon peels grated
- 2 packets of mixed fruit (375g)
- 1 orange (squeezed)
- 1 lemon (squeezed)
Mix the above ingredients with ½ a glass of water into a bowl or jar. Place a plate or lid over the ingredients and leave over night to soak. Drain remaining water next day when you prepare your pudding.
Second Step:
You’ll need:
- 5 cups of bread crumbs
- 1 teaspoon of mixed spices
- 2 cups of brown sugar
- 5 eggs
- 250g of butter
- 1 ¼ cup of sifted Plain Flower
- Mixed berries mixture
- Place flour into a mixing bowl. Add eggs one at a time whilst stirring the ingredients together.
- Pour in two cups of brown sugar and 1 teaspoon of mixed spices and stir.
- Add 5 cups of bread crumbs to the mix and stir.
- Pour in melted butter and stir to combine all the ingredients.
- Place mixture into a large bowl then add you mixed berries. Mix well to combine all ingredients.
Third Step
You’ll need:
- Cloth to wrap your pudding (Calico or Muslin)
- Wash cloth (calico or muslin) under hot water. Make sure the cloth remains hot and wet. Then lay flat and sprinkle with flour. Place your pudding in your prepared piece of cloth and gather up the ends. Secure the pudding tightly in the cloth with some string (make sure to shape your pudding before bundling it up). Create a loop with the string so that you can hang your pudding when it is cooked.
- Place some water into a pot to boil. When your water comes to the boil, place your pudding in the pot. Allow pudding to cook for 6 hours. Make sure to keep an eye on the water level and add more if needed.
- Remove pudding from the pot and place it somewhere to hang (like over a sink or bucket). Allow your pudding to dry and cool.
- When you are ready to eat, immerse your pudding into boiling water and allow to cook for at least 1 to 1 ½ hours. Remove pudding from the pot and allow it to drain for around 5 -10 minutes before unwrapping.
Serving tip:
Served best with custard.
