Cotoletta Milanese


Feast your eyes on this delicious cotoletta milanese recipe by former MasterChef contestant Amir Manoly.


Ingredients

2 veal cutlets

1/2 cup rice flour

2 eggs

1 cup fine breadcrumbs

1 cup panko breadcrumbs

1/4 grated parmesan

1/4 cup finely diced parsley

Salt to taste

750ml neutral oil


Directions

1. Bring the veal to room temperature and flatten with a mallet (roughly 1cm thick).

2. Prepare three bowls; in one add the rice flour, in another add the eggs and in the last combine breadcrumbs, parmesan, parsley and a generous pinch of salt.

3. Place the veal into the flour first, then the eggs and lastly the breadcrumbs making sure to press breadcrumbs into cutlets in a deep fry pan add the oil and bring to temp.

4. Place cutlets in, making sure not to overcrowd the pan.

5. Fry each side for 2-3 minutes or until golden brown and cooked through.

6. Remove from oil, sprinkle with some more salt and serve!
